Description

These Air Fryer Beef Taquitos are crispy, flavorful, and so easy to make! Perfect for a quick weeknight dinner or a fun appetizer.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1012 small flour tortillas (6-inch)
  • Cooking spray
  • Optional toppings: sour cream, guacamole, salsa, chopped cilantro

Instructions

  1. In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Stir in the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until the liquid has been absorbed.
  3. Remove from heat and stir in the shredded cheddar and Monterey Jack cheeses until melted and well combined.
  4. Warm the tortillas in the microwave for 15-20 seconds to make them more pliable.
  5. Spoon about 2-3 tablespoons of the beef mixture onto each tortilla.
  6. Tightly roll up each tortilla and secure with a toothpick, if needed.
  7. Preheat your air fryer to 400°F (200°C).
  8. Spray the taquitos with cooking spray.
  9. Place the taquitos in the air fryer basket in a single layer, being careful not to overcrowd. You may need to cook them in batches.
  10. Air fry for 6-8 minutes, or until golden brown and crispy, flipping halfway through.
  11. Remove from the air fryer and let cool slightly before serving.
  12. Serve with your favorite toppings, such as sour cream, guacamole, salsa, and chopped cilantro.

Notes

  • For extra crispy taquitos, spray them with cooking spray again after flipping.
  • If you don’t have an air fryer, you can bake these in the oven at 400°F (200°C) for 15-20 minutes, or until golden brown and crispy, flipping halfway through.
  • You can use different types of cheese, such as pepper jack or a Mexican cheese blend.
  • Feel free to add other ingredients to the beef mixture, such as diced onions, bell peppers, or corn.
